Rooibos (pronounced "ROY-bos"  Afrikaans for "red bush) is grown in a small region of the Western Cape province.  Generally the leaves are oxidized which produces the distinctive reddish-brown color of Rooibos and enhances the flavor.  The flavor of rooibos is often described as being naturally sweet and slightly nutty.  Rooibos is becoming more popular in Western countries particularly among health-conscious consumers due to the high level of antioxidants, lack of caffeine and low tannin levels compared to a fully oxidized black tea and an unoxidized green tea.
